Chinese Chicken With Cashews

  1. Pour oil into large microwave cooking container with a cover. Combine all other ingredients, except cornstarch, broth, green pepper and cashews.
  2. Heat oil, alone, for 1 minute.
  3. Add chicken mix and cover and cook for 4 minutes, stirring twice.
  4. Add green pepper and cashews.
  5. Cover and cook for 6 minutes, stirring twice. Add cornstarch, mixed in broth, and cook 1 1/2 minutes longer, stirring twice.
  6. Let stand, covered, 2 or more minutes.
  7. Serve with rice.
