Chinese Chicken With Cashews
- 3 Tbsp. oil
- 2 chicken breasts (1 1/4 to 1 1/2 lb.), boned, skinned and cut in 3/4-inch cubes
- 2 cloves minced garlic
- 3 Tbsp. soy sauce
- 1 1/2 Tbsp. sherry
- 1 1/2 Tbsp. cornstarch
- 1/2 tsp. minced fresh ginger or 1/4 tsp. dried
- 1/2 tsp. salt
- 1 c. chicken broth
- 1 green pepper, cut in 3/4-inch cubes
- 2/3 c. cashew halves
- Pour oil into large microwave cooking container with a cover. Combine all other ingredients, except cornstarch, broth, green pepper and cashews.
- Heat oil, alone, for 1 minute.
- Add chicken mix and cover and cook for 4 minutes, stirring twice.
- Add green pepper and cashews.
- Cover and cook for 6 minutes, stirring twice. Add cornstarch, mixed in broth, and cook 1 1/2 minutes longer, stirring twice.
- Let stand, covered, 2 or more minutes.
- Serve with rice.
