Chicken And Pecans
- 2 chickens, cut up
- salt and pepper to taste
- 4 Tbsp. butter
- 1/2 c. finely chopped onions
- 1/2 c. finely chopped celery
- 1 bay leaf
- 1/2 tsp. thyme
- 1/4 tsp. grated nutmeg
- 2 whole cloves
- 1 bottle (3 c.) dry red wine
- 1/2 c. heavy cream
- 1/2 c. chopped pecans
- 6 chicken breasts, boned and halved
- 1/3 c. olive oil
- 2/3 c. lemon juice
- 1 Tbsp. Dijon mustard
- 1/2 tsp. ground black pepper
- 1/2 tsp. salt
- 2 medium onions, chopped
- 2 cloves garlic, minced
- 2 Tbsp. brown sugar
- 1/4 c. clarified butter *
- 1 oz. shiitake mushrooms, soaked in warm water for 30 minutes
- Assemble this recipe the night before in order to give the chicken time to marinate.
