Five-Spice Fish
- 4 4 haddock or 4 whiting fish, about 6 oz. each
- 1 teaspoon Chinese five spice powder
- 4 teaspoons cornstarch
- 1 tablespoon sunflower oil
- 3 scallions, shredded
- 1 teaspoon grated fresh gingerroot
- 1 1/4 cups button mushrooms, sliced
- 2/3 cup baby corn, sliced
- 2 tablespoons soy sauce
- 3 tablespoons dry sherry
- 1 teaspoon sugar
- salt and pepper
- Toss the fish in the five-spice powder and cornstarch to coat.
- Heat the oil in a frying pan or wok and stir-fry the scallions, ginger, mushrooms, and corn for 1 minute.
- Add the spiced fish and cook for 2 minutes, turning once.
- Mix together the soy sauce, sherry, and sugar, then pour over the fish.
- Simmer for 2 minutes.
- Season to taste and serve.
