Sensational Sweet Potato Cake
- 1 (18.25 oz) yellow cake mix
- 1 (15.25 oz) can crushed pineapple, drained
- 1 (15.25 oz) can sweet potato pieces, drained and mashed
- 1-1/3 cups skim milk
- 3 large eggs
- 2 Tbsp vegetable oil
- 1 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1 tsp vanilla extract
- Beat all ingredients at low speed with electric mixer until well blended.
- Pour into three 9 inch round cake pans coated with vegetable cooking spray and dusted with flour.
- Bake at 350 degrees for 20 to 25 minutes or until wooden pick inserted in center comes out clean.
- Cool in pans on wire racks 10 minutes; remove from pans onto wax paper and cool on wire racks.
- Spread cream cheese frosting between layers and on top and sides of cake.
