The Best Lasagne
- 1 lb. box lasagne noodles
- 1 lb. ground chuck
- 1 giant onion, diced
- 3 to 4 cloves garlic, crushed
- 2 Tbsp. olive oil
- 2 qt. canned tomatoes
- 1 large can tomato paste
- 1 to 2 lb. fresh mushrooms, sliced
- 2 lb. cottage cheese
- 1 (8 oz.) pkg. Mozzarella cheese, grated
- 3 to 5 basil leaves, crushed or chopped
- 1 Tbsp. chopped parsley
- salt and pepper to taste
- grated Parmesan cheese
- In a heavy 3 or 4-quart pot, brown the meat, onion and garlic in the olive oil.
- Add the tomatoes and paste, the mushrooms, basil, parsley, salt and pepper.
- Simmer for 1 1/2 hours.
- Cook the lasagne noodles according to the package directions.
