Chicken Casserole *

  1. Cook, bone and cube chicken.
  2. Mix together Escort crackers and butter to make crust.
  3. Line pan with 1/2 mixture leaving 1/2 for top.
  4. Mix chicken, water chestnuts, pimentos, mushroom and chicken soup (rinse soup cans with 1/4 cup chicken broth).
  5. Add sour cream and pour this mixture into lined pan.
  6. Sprinkle reserved crumbs over top of mixture.
  7. Bake at 350u0b0 for 30 to 45 minutes or until desired brownness is reached.
  8. This casserole may be made a day in advance and refrigerated before baking.
  9. Serves 6 to 8.
