Smoky Mountain Jam Cake
- 1 c. sugar
- 3/4 c. butter
- 1/2 tsp. vanilla
- 3 eggs
- 1 1/2 c. self-rising flour
- 1/2 tsp. cinnamon
- 1/2 tsp. ground cloves
- 1/2 tsp. allspice
- 1/4 tsp. baking soda
- 1/4 c. buttermilk
- 1/2 c. strawberry preserves
- 1/2 c. blackberries
- 1 c. plum jelly
- Caramel Icing
- Grease and flour 2 baking pans.
- Cream sugar and butter with mixer in bowl until fluffy.
- Add vanilla; blend.
- Add eggs; blend. Sift flour, cinnamon, cloves, allspice and baking soda into separate bowl.
- Alternately beat flour mixture and buttermilk into creamed mixture.
- Stir in preserves and blackberries.
- Pour into pans and bake at 325u0b0 for 45 to 50 minutes until done.
- Cool; turn out of pans.
- Place bottom layer on cake plate.
- Spread plum jelly over layer.
- Add top layer.
- Frost with caramel icing.
