Chili-Cheese Bites
- 1 1/2 c. fine saltine cracker crumbs
- 6 Tbsp. margarine, melted
- 2 c. shredded Cheddar cheese
- 1 tsp. taco seasoning
- 1 (8 oz.) pkg. cream cheese
- 1/4 tsp. cayenne pepper
- 1/4 tsp. granulated garlic
- 3 eggs
- 1 (4 oz.) can chopped green chilies
- 2 Tbsp. very finely chopped onion
- Preheat oven to 400u0b0.
- Bring cheeses to room temperature. Combine crumbs and margarine in an 8-inch square pan.
- Press onto the bottom and up the sides of the pan, forming a crust.
- Bake for 10 minutes and set aside.
- Reduce oven heat to 250u0b0.
- In a large mixing bowl, blend cheeses at medium speed.
- Add cayenne and garlic.
- Add eggs, one at a time, beating after each addition. Fold in chilies and onion.
- Pour into prepared crust and bake 1 hour until set.
- Cool and cut into 1-inch squares.
- Serve at room temperature or slightly chilled.
- Makes 64 bite sized appetizers.
