Crabmeat Teche
- 1 large bell pepper, chopped
- 2 large white onions, chopped
- 6 ribs celery, chopped
- 1 large can mushrooms (stems and pieces)
- 3 cloves garlic (put through press)
- 4 Tbsp. bacon drippings
- 6 slices dry toast
- 1 1/2 to 2 cans chicken broth
- 1 Tbsp. Worcestershire sauce
- 1 tsp. salt
- 1/2 tsp. black pepper (freshly ground if possible)
- 1/2 tsp. celery salt
- 1 tsp. oregano, pounded
- dash of hot sauce
- 3/4 c. chopped parsley
- 1 lb. can white lump crabmeat *
- 3/4 c. cracker crumbs
- 3 Tbsp. butter
- dash of paprika
- *Equivalent amount of canned Alaskan King crabmeat may be substituted.
