Super Carrot Cake
- 3 c. packed, shredded carrots
- 1 Tbsp. lemon juice
- 1 (20 oz.) can crushed pineapple, well drained
- 1 tsp. salt
- 2 tsp. cinnamon
- 1/2 tsp. crushed cloves
- 1/2 tsp. nutmeg
- 1/2 tsp. allspice
- 1 c. chopped nuts (walnuts)
- 1 c. chopped dates
- 3 c. flour
- 2 c. sugar
- 2 tsp. baking powder
- 2 tsp. baking soda
- 1 1/2 c. oil
- 5 eggs
- 2 tsp. vanilla
- 1 c. flaked coconut
- Combine carrots and lemon juice.
- Combine flour, sugar, baking powder, baking soda, spices and salt in a bowl.
- Beat in eggs, one at a time and stir in vanilla, coconut, walnuts, dates and pineapple until well blended.
- Pour into greased pans (2 loaf pans).
- Bake at 350u0b0 until toothpick comes out clean and cakes shrink away from sides of pan (approximately 60 minutes).
