Lean Beef Stroganoff

  1. Remove visible fat from roast and slice into pieces about 2 x 2 x 1/2 inches.
  2. Dredge meat with 6 tablespoons flour that has been seasoned with salt and pepper.
  3. Brown meat in oil.
  4. Add onions, tomato juice and 1 1/2 cups water.
  5. Cover and simmer 1 to 1 1/2 hours.
  6. Add mushrooms; simmer 30 minutes more.
  7. Thicken with 2 tablespoons flour that has been combined with 1/2 cup of water. Add evaporated milk and heat to almost simmering.
  8. Serve with rice or noodles.
