Lean Beef Stroganoff
- 2 lb. lean beef roast
- 6 Tbsp. flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 Tbsp. corn oil
- 1 c. onions, chopped
- 1 c. tomato juice
- 1 1/2 c. water
- 1/2 lb. sliced fresh mushrooms
- 2 Tbsp. flour
- 1/2 c. water
- 1 1/2 c. evaporated skimmed milk
- Remove visible fat from roast and slice into pieces about 2 x 2 x 1/2 inches.
- Dredge meat with 6 tablespoons flour that has been seasoned with salt and pepper.
- Brown meat in oil.
- Add onions, tomato juice and 1 1/2 cups water.
- Cover and simmer 1 to 1 1/2 hours.
- Add mushrooms; simmer 30 minutes more.
- Thicken with 2 tablespoons flour that has been combined with 1/2 cup of water. Add evaporated milk and heat to almost simmering.
- Serve with rice or noodles.
