Lemon Squares
- 1 c. all-purpose flour
- 1/2 c. margarine or butter, softened
- 1/4 c. powdered sugar
- 2 eggs
- 1 c. granulated sugar
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 2 tsp. grated lemon peel (if desired)
- 2 Tbsp. lemon juice
- powdered sugar
- Heat oven to 350u0b0.
- Mix flour, margarine and 1/4 cup powdered sugar thoroughly.
- Press evenly in ungreased square pan, 8 x 8 x 2-inches, building up 1/2-inch edges.
- Bake for 20 minutes.
- Beat remaining ingredients, except powdered sugar, until light and fluffy, about 3 minutes.
- Pour over hot crust.
- Bake just until no indentation remains when touched in center, about 25 minutes longer.
- Cool; sprinkle with powdered sugar.
- Cut into about 1 1/2-inch squares.
- Makes 25 squares.
