Lemon Squares

  1. Heat oven to 350u0b0.
  2. Mix flour, margarine and 1/4 cup powdered sugar thoroughly.
  3. Press evenly in ungreased square pan, 8 x 8 x 2-inches, building up 1/2-inch edges.
  4. Bake for 20 minutes.
  5. Beat remaining ingredients, except powdered sugar, until light and fluffy, about 3 minutes.
  6. Pour over hot crust.
  7. Bake just until no indentation remains when touched in center, about 25 minutes longer.
  8. Cool; sprinkle with powdered sugar.
  9. Cut into about 1 1/2-inch squares.
  10. Makes 25 squares.
