Kentucky Pie
- pastry dough for 9-inch pie shell
- 1 c. flour
- 1 c. sugar
- dash of salt
- 1/2 c. butter, melted
- 2 eggs, beaten
- 2 tsp. vanilla
- 1 3/4 c. walnut pieces
- 1 c. chopped quality chocolate (do not use commercial chips)
- whipped cream (for garnish)
- d surface to 1/8-inch thickness.
- Fit into 9-inch pie plate; trim and flute edge.
- Pierce bottom with fork.
- Bake at 350u0b0 for 20 minutes, or until bottom is cooked through but not brown.
- Cool. Mix flour, sugar and salt.
- Put butter and eggs into large bowl; stir in dry ingredients.
- Stir in vanilla.
- Stir in walnuts and chocolate chips; pour into cooled pie shell.
- Bake at 325u0b0 for 40 to 45 minutes, until top is golden.
- Cool slightly on rack.
- Serve warm, cut in wedges topped with Cool Whip.
