Beef Enchiladas
- 1 lb. extra lean ground beef
- 1 small onion, diced
- 1 (4 oz.) can diced green chilies
- 1/2 tsp. black pepper
- 1 c. shredded cheese, divided
- 8 (6-inch) corn tortillas
- 1 (10 oz.) can enchilada sauce
- Preheat oven to 350u0b0.
- In large skillet cook beef and onions until brown.
- Drain off fat.
- Add diced chilies and pepper. Divide beef mixture evenly on each tortilla.
- Using one half cup shredded cheese, sprinkle a small amount of enchilada sauce in bottom of 13 x 9-inch baking pan.
- Roll each tortilla in and place in pan.
- Cover with remaining cheese and sauce.
- Bake 15 minutes or until hot and cheese is melted.
- Yields 4 portions (2 enchiladas).
