Chocolate Pumpkin Cake
- fine dry bread crumbs
- 2 3/4 c. flour
- 3/4 c. unsweetened cocoa
- 2 tsp. baking powder
- 1 tsp. baking soda
- 1 1/2 tsp. cinnamon
- 1/2 tsp. ginger
- 1/4 tsp. cloves
- 1/4 tsp. nutmeg
- 1/2 tsp. salt
- 1 c. butter
- 2 c. sugar
- 1 1/2 tsp. vanilla
- 4 eggs
- 1 (1 lb.) can pumpkin (1 3/4 c.)
- 1 1/2 c. chopped walnuts
- Thoroughly grease a 3-quart fluted tube pan; sprinkle with bread crumbs and set aside.
- Mix well the flour, cocoa, baking powder, baking soda, salt and spices.
- Set aside.
- In large bowl, cream butter with sugar and vanilla.
- Add eggs, one at a time, beating well after each.
- Stir in half the flour mixture, then the pumpkin and remaining flour mixture just until well blended.
- Stir in walnuts.
