Peanut Butter Sugarless Cookies
- 1 1/2 c. sifted unbleached white flour
- 1 1/2 tsp. double-acting baking powder
- 1/2 tsp. salt
- 1/4 c. brown sugar
- 1 tsp. grated fresh orange zest
- 1 egg, well beaten
- 4 packets artificial sweetener
- 1/4 c. diet margarine
- 1/2 c. smooth, natural peanut butter
- 2 tsp. vanilla extract
- 1/3 c. orange juice
- Preheat oven to 400u0b0. Sift together flour, baking powder and salt. Cream together margarine, sugar, peanut butter, orange zest and vanilla. Add egg, orange juice and sweetener. Blend well. Add dry ingredients gradually; mix well after each addition. Measure 1 level tablespoon dough for each cookie. Roll in hands to form ball. Place 2 inches apart on an ungreased cookie sheet. Flatten with fork. Bake about 15 minutes. Store cookies in a tightly covered tin.
- These cookies have better flavor and texture 24 hours after baking.
