Muenstrously Delicious Onion Casserole
- 2 Tbsp. butter
- 2 large sweet Spanish onions, sliced and separated into rings
- 2 c. (8 oz.) grated Muenster cheese
- 1/4 tsp. pepper
- 1 (10 oz.) can cream of chicken soup
- sliced, buttered, slightly dry French bread
- milk (enough to make soup creamy)
- Melt butter in large frying pan. Add onion rings. Cover and cook slowly over low heat, stirring often, for 20 to 30 minutes or until soft. Spoon into a 6-cup, fairly shallow baking dish. Spread cheese over top and sprinkle with pepper. Heat soup and milk in same frying pan in which onions were cooked, stirring until smooth. Pour over onion-cheese layer. Stir lightly with tip of knife to let sauce flow to bottom. Overlap enough bread slices, buttered side up, to make a ring around top. Bake in 350u0b0 oven for 30 minutes or until bread is toasted and sauce is hot. Serves 6 to 8.
