Spicy Chicken With Broccoli
- 2 lb. chicken breasts
- 2 tsp. cornstarch
- 1/4 tsp. pepper
- 1 lb. broccoli flowerets
- 3 green onions
- 1 tsp. dried red pepper flakes
- 2 tsp. finely chopped garlic
- 1 tsp. sugar
- 1/2 tsp. salt
- 3 Tbsp. oil
- 1 tsp. ginger
- Cut chicken into 2 1/2-inch pieces.
- Toss with cornstarch, salt and pepper in medium bowl.
- Cover and refrigerate 20 minutes. Boil broccoli 1 minute.
- Drain and rinse in cold water immediately.
- Cut onions diagonally into 1-inch pieces.
- Heat wok or skillet until very hot.
- Add oil and spread around.
- Add red pepper, garlic, sugar and ginger; stir-fry 10 seconds.
- Add chicken and stir-fry until white.
- Add broccoli and onion; stir-fry until broccoli is hot.
- Makes 4 servings.
