Red Beans And Rice
- 2 lg. cans kidney beans
- 1/4 c. olive oil
- 1 lg. onion (chopped)
- 1 green bell pepper (chopped)
- 2 Tbsp. minced garlic
- 2 bay leaves
- 1/2 tsp. cayenne pepper
- 1 tsp. dried thyme
- 1/4 tsp. dried sage
- 1 Tbsp. dried parsley
- 1 tsp. Cajun seasoning
- 1 lb. smoked sausage
- 2 c long grain white rice
- In skillet, heat oil over med. heat. Saute onion, bell pepper, garlic in oil for 3-4 minutes. Empty kidney beans in large saucepan. Stir cooked vegetables into beans. Add all seasonings. Bring to a boil, then reduce heat to simmer for 30 minutes. Slice sausage and add to beans, continue to simmer for 30 minutes more. Prepare rice as directed. Remove bay leaves from beans.
- Serve over rice.
