Hearty Home-Style Chili
- 2 lb. ground beef
- 1 medium onion, chopped
- 1 c. sliced celery
- 1/2 c. chopped green bell pepper
- 1/2 c. red bell pepper
- 28 oz. can tomatoes, cut up
- 6 oz. can tomato paste
- 4 garlic cloves, minced
- 2 tsp. salt
- 2 tsp. chili powder
- 1 tsp. cumin
- 1 tsp. cayenne pepper
- 1/2 tsp. black pepper
- 2 (15 oz.) cans red kidney beans (undrained)
- In a large saucepan or Dutch oven, brown ground beef and onion; drain.
- Add all remaining ingredients except kidney beans. Bring to a boil.
- Reduce heat.
- Cover and simmer 1 hour.
- Add kidney beans; simmer until thoroughly heated.
- Makes seven 1 1/2-cup servings.
