French Onion Soup
- 1 medium onion or 2 small onions, thinly sliced
- 3 Tbsp. butter
- 1 Tbsp. flour
- 1 (10.5 oz.) can beef consomme
- 1/2 soup can water
- 2 slices French bread
- 1/4 tsp. garlic powder
- 1 Tbsp. olive oil
- 6 Tbsp. grated Mozzarella cheese
- 1 (15 oz.) can navy beans, rinsed and drained
- 1 (15 oz.) can red beans, rinsed and drained
- 1 (15 oz.) can black beans, rinsed and drained
- 2 stalks celery, sliced (1 c.)
- 1/2 c. thinly sliced green onion
- 1/2 c. vinegar
- 1/4 c. molasses
- 1/4 c. salad oil
- 1 Tbsp. Dijon-style mustard
- 1/4 tsp. pepper
- lettuce leaves
- 2 c. torn curly endive
- 2 slices bacon, crisp-cooked, drained and crumbled
- green onion strips (optional)
- In a large bowl, combine beans, celery and green onion.
