Doctor Bird Cake Plus
- 3 c. sifted all-purpose flour
- 1 tsp. baking soda
- 1 tsp. cinnamon
- 2 c. white sugar
- 1 tsp. salt (optional)
- 2 c. diced bananas (very ripe)
- 1 c. cooking oil (your choice)
- 1 (8 oz.) can crushed pineapple with juice
- 1 1/2 tsp. vanilla
- 3 eggs
- 1/2 c. maraschino cherries finely chopped
- 1/2 c. black walnut pieces or nuts of your choice
- Measure dry ingredients and sift together. Dice bananas to equal 2 cups. Add bananas to dry ingredients along with oil, pineapple and
- juice, vanilla, and eggs. Stir to blend---DO NOT BEAT. Gently stir in chocolate chips, cherries, and nuts. Blend well. Pour into a greased 9 inch tube pan or bundt pan. Bake at 350u0b0 for 1 hour 20 minutes. Set aside to cool on a rack without removing from pan.
