Original Kentucky Whiskey Cake(A Cissy Gregg Recipe)
- 5 c. all-purpose flour (sifted before measuring; reserve 1/4 to 1/3 c. for the nuts)
- 2 tsp. nutmeg
- 1 tsp. baking powder
- 2 c. white sugar
- 1 c. brown sugar
- 3/4 lb. butter
- 6 eggs, beaten separately
- 1 pt. Kentucky bourbon whiskey
- 1 lb. red candied cherries, halved
- 1 lb. shelled pecans, broken
- 1/2 lb. golden raisins or 1/2 lb. chopped dates
- Soak cherries and raisins in bourbon overnight.
- After flouring nuts, sift rest of flour with baking powder and nutmeg 3 times.
- Cream butter and sugar until fluffy.
- Add egg yolks and beat well.
- Add soaked fruit and remaining liquid and flour to butter, sugar, egg mixture.
- Fold in beaten egg whites.
- Add floured pecans.
- Bake in large greased tube pan (lined with brown paper, greased and floured).
- Bake at 250u0b0 to 275u0b0 for 3 to 4 hours.
- Watch baking time.
- Cool completely and place in tightly covered container.
- Stuff center hole with cheesecloth soaked in bourbon.
- Wrap in heavy waxed paper.
- Keep very cool.
- Refrigerate if necessary.
