Weight Watchers Crockpot Tuscan Turkey Pasta
- 1 lb turkey breast, boneless, skinless cut into 1-inch pieces
- 16 ounces canned kidney beans, drained and rinsed
- 15 ounces canned tomato sauce
- 29 ounces canned stewed tomatoes, Italian-style
- 4 ounces mushrooms, canned drained and sliced
- 1 medium green pepper, chopped
- 1 small onion, chopped
- 2 celery ribs, chopped
- 3 cloves, garlic, chopped
- 1 cup water (may need to add more before adding pasta)
- 1 tablespoon italian seasoning
- 6 ounces whole-wheat spaghetti, uncooked, broken
- Place all ingredients, except spaghetti, in a slow cooker. Cover and cook on low heat for 4 hours or until vegetables are tender.
- Turn setting to high heat, stir in spaghetti and cover. Stir again after 10 minutes, cover and cook until pasta is tender, about 20 minutes more. Yields about 1 1/2 cups per serving.
