Shrimp With Lime Sauce
- 2 Tbsp. olive ol
- 1/2 lb. mushrooms, sliced
- 8 green onions, sliced thin
- 2 tsp. crushed garlic
- 1 Tbsp. freshly grated ginger
- 1 c. chicken broth
- 3 Tbsp. lime juice
- 2 tsp. Worcestershire sauce
- 1/2 c. evaporated skim milk
- 24 large peeled and deveined shrimp
- Heat olive oil in large skillet; add mushrooms and saute 1 minute. Stir in green onions, garlic and ginger.
- Add chicken broth, lime juice, Worcestershire sauce and shrimp.
- Cook 2 to 3 minutes or until shrimp are pink.
- Meanwhile, heat evaporated milk in glass measuring cup in microwave just until bubbles appear around edge (30 seconds).
- Stir milk into shrimp mixture and serve immediately over rice or noodles.
- Yields 4 servings.
