Sweetheart Salad

  1. Soften gelatin in cold water.
  2. Meanwhile, in a saucepan, bring sugar and pineapple (with juice) to a boil, stirring until the sugar dissolves.
  3. Remove from heat.
  4. Add gelatin and stir until dissolved.
  5. Add lemon and cherry juices.
  6. Cool to lukewarm.
  7. Whisk in cream cheese until thoroughly combined.
  8. Stir in the cherries and food coloring, if desired.
  9. Chill until slightly thickened. Fold in whipped topping.
