Creamy Buffalo Chicken
- 4 boneless skinless chicken cutlets
- 4 ounces lowfat neufchatel cheese
- 1 cup reduced-fat sharp cheddar cheese, shredded
- 1/4 cup buffalo wing sauce (such as Frank's)
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
- 1/8 teaspoon garlic powder
- Preheat oven to 400 degrees.
- Season chicken breast with salt, pepper and garlic powder.
- Grill chicken in grill pan over medium high heat (chicken does not need to be cooked through, about 2 to 3 minutes on each side).
- Meanwhile mix cream cheese, 1/2 of the cheddar cheese and the buffalo sauce.
- Once grillmarks are on both sides of the chicken, place in 9x13 inch casserole dish that has been sprayed with cooking spray.
- Divide cheese mixture and spread mixture over each chicken breast.
- Top with remaining cheddar cheese.
- Bake until cheese is bubbly and chicken is cooked through, about 15 to 20 minutes.
