Pie Apple Sponge Cake
- 1/2 c. flour
- 1/2 c. sugar
- 1 tsp. baking powder
- 1/2 c. oil
- 1 egg
- 1 can apple pie filling
- 1/4 c. canola oil
- 1/2 c. molasses
- 1 egg
- 3/4 c. nonfat, plain yogurt
- 1 2/3 c. whole wheat flour, very finely ground
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. ginger
- Preheat oven to 350u0b0.
- In a large mixer bowl, beat oil, molasses and egg together well.
- Add yogurt and mix well.
- Sift dry ingredients together.
- Add all at once to wet ingredients. Mix lightly; extra beating will toughen the cake.
- Turn batter into a nonstick 9-inch square pan.
- Bake 25 minutes or until center of cake springs back when touched lightly with fingertip. Cool briefly in pan on rack.
- Serve warm with Lemon Syrup.
