Chicken Salad On Melon

  1. For dressing, in a blender combine sugar, vinegar, lemon juice, mustard and salt.
  2. Cover and blend for 5 seconds.
  3. Through the opening in the lid on slow speed, gradually add oil in a thin stream.
  4. Stop blender and scrape sides.
  5. Cover and blend for 1 to 2 minutes more or until the dressing is slightly thickened.
  6. Stir in poppy seed.
