Peppy Clam Shells
- 1/2 c. finely chopped onion
- 1/2 c. finely chopped celery
- 1/2 c. finely chopped green pepper
- 4 Tbsp. butter
- 2 Tbsp. flour
- 1 Tbsp. grated Parmesan cheese
- 1/4 tsp. salt
- dash of pepper
- 1 tsp. Worcestershire sauce
- dash of hot pepper sauce
- 1/2 c. crushed round crackers (12)
- 1 Tbsp. butter
- 1 (10 oz.) can whole baby clams
- In medium skillet, cook onion, celery and green pepper in 4 tablespoons butter until tender but not brown.
- Stir in flour, cheese and seasonings.
- Add 1/4 cup cracker crumbs; mix well. Stir in undrained clams; cook until mixture thickens.
- Divide among 4 large baking shells.
- Combine the rest of the crumbs and butter; sprinkle on top.
- Bake in a 350u0b0 oven for 15 minutes.
