Fresh Apple Pound Cake
- 1 c. shortening
- 2 c. sugar
- 5 eggs
- 2 tsp. vanilla
- 1 tsp. margarine
- 3 c. plain flour
- 1 1/2 tsp. cinnamon
- 1 tsp. allspice
- 1/2 tsp. nutmeg
- 1/2 tsp. salt
- 1/2 tsp. soda
- 3/4 c. buttermilk
- 1 c. fresh apples, grated
- 1/2 c. chopped pecans
- Preheat oven to 325u0b0.
- Cream shortening and sugar.
- Add eggs, beating after each one.
- Add vanilla and mix well.
- Mix flour, spices, salt and soda together and add to sugar mixture alternately with buttermilk.
- Fold in apples and pecans.
- Blend well.
- Pour into 10-inch well-greased and floured tube cake pan. Bake at 325u0b0 for 1 hour and 20 minutes or until toothpick comes out clean.
- Remove and brush with glaze.
