Spinach Salad
- 2/3 c. vegetable oil
- 1/4 c. red wine vinegar
- 2 tsp. lemon juice
- 2 tsp. soy sauce
- 1 tsp. sugar
- 1 tsp. dry mustard
- 1/2 tsp. curry powder
- 1/2 tsp. salt
- 1/4 tsp. garlic powder
- 1 tsp. seasoned pepper
- 1 pkg. fresh spinach, torn into bite size pieces
- 5 bacon strips, cooked and crumbled
- 2 hard-cooked eggs, sliced
- 1 1/2 lb. fresh, whole green beans, cleaned and destrung
- 1/3 lb. good Swiss cheese, in thin strips
- 1/2 c. chopped ripe olives
- 1/2 c. each: thinly sliced green and red peppers
- 1/2 c. (or more) chopped, toasted almonds
- This salad is most delicious when made a day in advance and marinated overnight.
- Actual preparation time: about 30 minutes.
