Seafood Gumbo
- 1 clove garlic, minced
- 1 green pepper, chopped
- 1 (10 oz.) pkg. frozen sliced okra
- 2 (1 lb.) cans tomatoes, drained
- 3 c. water
- 1/4 tsp. pepper
- 1 bay leaf
- 1 lb. shrimp
- 1 doz. shelled oysters
- 1 tsp. file powder (optional)
- 6 onions, chopped
- 3 Tbsp. corn oil
- 2 tsp. salt
- 2 drops hot sauce
- 1/4 c. rice
- 1/2 lb. crabmeat
- 2 Tbsp. parsley
- In Dutch oven, saute garlic, onions and green pepper in oil. Add okra, tomatoes, water and salt;
- boil.
- Cover and simmer for 10 minutes.
- Add shrimp to Dutch oven; stir.
- Return to a boil, cover and simmer for 10 minutes.
- Add crabmeat, oysters and parsley to shrimp mixture.
- Simmer for 2 minutes.
- Remove bay leaf.
- Ladle gumbo into 8 individual bowls, stir gently to mix all ingredients.
- Serve with crackers.
