Albacore Fettucine
- 4 c. broccoli florets or 10 oz. pkg. frozen broccoli cuts
- 1/2 lb. fettucine
- 1 (12 1/2 oz.) can solid white albacore tuna in spring water, drained
- 1 c. low-fat Ricotta cheese
- 1/3 c. grated Parmesan cheese
- 1/2 c. low-fat milk
- 1/2 tsp. garlic salt
- 1/2 tsp. dried Italian seasoning
- Bring large pot of water to a boil.
- Cook broccoli until crisp-tender; remove with slotted spoon and place in serving bowl. Add fettucine to same pot of boiling water and cook until tender. Drain and add to broccoli.
- Mix in tuna.
- Combine remaining ingredients and cook in same pot, stirring, until sauce is smooth and heated through.
- Season with salt and pepper.
- Pour sauce over pasta mixture and toss.
- Makes 4 to 5 servings.
