Layered Garden Pasta Salad
- 7 to 8 oz. pkg. spiral vegetable pasta
- 1/2 c. green onion with tops, chopped
- 1/4 c. Bac*Os or real bacon
- 1 c. mayonnaise
- 1/4 c. lemon juice
- 3 Tbsp. grated Parmesan cheese
- 1 tsp. sugar
- 1/2 tsp. garlic powder
- 4 c. bite size lettuce or salad greens
- 1 medium zucchini, 1/2 sliced or quartered
- 1 c. sliced or small pieces cauliflower
- 1 c. broccoli pieces
- 1/2 c. green peppers, bite size pieces
- 1/2 c. celery, bite size pieces
- 2 medium tomatoes, wedged
- pepperoni slices, cut in half
- Cook pasta as directed, rinse in cold water.
- Add onions and Bac*Os to pasta.
- In separate bowl, mix mayonnaise, lemon juice, cheese, sugar and garlic powder.
- Using a 3 1/2-quart salad bowl, layer lettuce, pasta mixture and vegetables.
- Top with dressing mixture and border with tomatoes; top with extra Bac*Os. Refrigerate 2 hours or more before serving.
