Pineapple Dream Squares
- BASE
- cooking spray
- 1 1/2 cups all-purpose flour
- 1/4 cup brown sugar, lightly packed
- 1/2 cup butter or 1/2 cup margarine, softened
- TOPPING
- 3 eggs
- 1 cup flaked coconut
- 3/4 cup brown sugar, lightly packed
- 3/4 cup corn syrup
- 1 (14 ounce) can crushed pineapple, well drained
- 2 tablespoons butter or 2 tablespoons margarine, melted
- 1 teaspoon vanilla extract
- TO MAKE BASE;
- Preheat oven to 350u0b0F Spray a 9-inch square pan with cooking spray. In a medium bowl, combine flour and brown sugar. Cut in butter until mixture is crumbly. Press into bottom of pan. Bake until lightly browned, 12-15 minutes. Cool slightly.
- TO MAKE TOPPING:.
- In a medium bowl, whisk eggs just until blended. Stir in remaining ingredients. Spread over base.
- Bake until topping is set but still soft in center, 40-45 minutes. Cool completely on a wire rack. Cut into squares. Keep refrigerated.
