Microwave Breakfast Pita Pockets

  1. Crumble sausage into a shallow 1-quart casserole.
  2. Cover tightly with heavy-duty plastic wrap.
  3. Fold back a small edge of wrap to allow steam to escape.
  4. Microwave on High 3 to 4 minutes or until sausage is browned, stirring once.
  5. Drain well on paper towels.
  6. Set aside.
  7. Combine eggs, milk, oregano, salt and pepper in a shallow 1-quart casserole, mixing well.
  8. Microwave on High 2 to 4 minutes, pushing cooked portion to center at 1 minute intervals.
  9. Cut cheese and pita bread rounds in half.
  10. Line each bread half with 1 piece of cheese.
  11. Combine sausage and egg mixture.
  12. Spoon about 1/4 cup sausage-egg mixture into pita pockets.
  13. Wrap each pita pocket in a paper towel.
  14. Place 4 pita pockets on a paper plate or glass pizza plate and microwave on Medium (50% power) 1 to 2 minutes or until warm.
  15. Repeat process with remaining sandwiches.
  16. Makes 4 servings.
