Applesauce Raisin Bread
- 1 egg
- 1 c. applesauce
- 4 Tbsp. butter or margarine, melted
- 1/2 c. granulated sugar
- 1/4 c. brown sugar
- 2 c. flour
- 2 tsp. baking powder
- 3/4 tsp. salt
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 1 tsp. nutmeg
- 1/2 c. raisins
- 1 c. coarsely chopped pecans or walnuts
- In a large bowl, beat egg lightly; stir in applesauce, butter, granulated sugar and brown sugar, mixing until well combined. Blend in flour, baking powder, salt, baking soda, cinnamon and nutmeg.
- Stir in raisins and nuts.
- Turn batter into a well-greased 9 x 5-inch loaf pan or a plain or fluted 1-quart ring mold.
- Bake in a preheated 350u0b0 oven (325u0b0 for a glass pan) for 1 hour or until a wooden pick inserted in center comes out clean. Let cool in pan for 10 minutes, then turn out onto a rack to cool completely.
- Makes 1 loaf.
