Whole Wheat Cranberry Bran Bread
- 1 c. all-purpose flour
- 2 c. whole wheat flour
- 1/2 c. all-bran or crushed bran cereal with raisins
- 3/4 c. light brown sugar
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1 c. chopped nuts
- 1 c. cranberries, chopped
- 1/4 c. granulated sugar
- 1 egg
- 1/2 c. milk
- 1/2 c. orange juice
- 1/2 c. melted margarine or vegetable oil
- Combine flours, bran cereal, brown sugar, baking powder, baking soda and nuts; mix well.
- Combine cranberries and granulated sugar.
- Stir sugared cranberries, egg, milk, orange juice and margarine into flour mixture all at once, but only until mixed.
- Pour into greased 9 x 5 x 3-inch loaf pan.
- Preheat oven to 350u0b0.
- Bake in oven for 60 to 70 minutes, or until firm in center.
- Cool in pan 10 minutes; remove to rack and cool on long side before slicing.
- Freezes well.
- Makes 1 loaf.
