Chocolate Meringue Pie
- 1 1/2 c. cocoa
- 1 c. sugar
- 3 Tbsp. cornstarch
- 1/4 tsp. salt
- 2 c. milk
- 2 egg yolks
- 3 Tbsp. margarine
- 1 tsp. vanilla
- 1 baked pie shell
- 2 egg whites
- 4 Tbsp. sugar
- Combine
- cocoa, sugar, cornstarch and salt in saucepan. Add milk
- slowly,
- stirring
- well.
- Cook
- and stir constantly until mixture

- boil
- and is thickened.
- Stir in beaten egg yolks, onett
- a time.
- Cook, stirring constantly, about 3 minutes longer.
- Remove
- from
- heat; stir in margarine and vanilla.
- Cool slightly.
- Pour
- into shell. Beat egg white until foamy
- throughout.tdd
- sugar.
- Blend
- well.
- Continue until meringue will stand in stiff peaks.
- Pile lightly on pie filling. Bake in oven at 425u0b0 until light brown.
