Award Winning Meatballs In Peanut Sauce

  1. Preheat oven to 350 degrees. Place bread crumbs in a large bowl top with 1/2 and 1/2 soak five minutes.
  2. Add the rest of the meatball ingredients and mix well.
  3. Make golf size balls.
  4. Mix flour and paprika together.
  5. Coat balls in flour mixture.
  6. Place on a parchment lined cookie sheet and bake in preheated oven for 15 minutes.
  7. Sauce:
  8. Meanwhile heat oil in a large pan.
  9. Saute onions, garlic, ginger five minutes.
  10. Add rest of sauce ingredients except parsley and simmer 5 minutes.
  11. Add baked meatballs and simmer 5 minutes this sauce with extra broth or water.
  12. Garnish with parsley.
  13. Can be eaten with toothpicks or placed in lettuce as wraps.
