Welsh Cookies

  1. Combine dry ingredients;
  2. blend margarine and lard into dry ingredients as you
  3. would
  4. for
  5. pie
  6. crust.
  7. Add currants. Make a well in the
  8. center;
  9. add beaten eggs and milk to well. Form a ball of dough.
  10. When
  11. all
  12. the dough has formed and the bowl is clean, break
  13. off
  14. smaller pieces and roll to 1/4-inch thickness. Cut in circles
  15. and
  16. fry
  17. on
  18. electric
  19. griddle at 300u0b0.
  20. Fry on one side
  21. for
  22. 3 minutes, then flip once and fry until brown. Cool on racks.
  23. Bag in plastic.
  24. Makes 6 dozen.
