Welsh Cookies
- 7 c. flour
- 2 1/2 c. sugar
- 3 tsp. nutmeg
- 2 tsp. salt
- 6 tsp. baking powder
- 1 c. currants or raisins
- 1/2 lb. lard
- 1/2 lb. margarine
- 3/4 c. milk
- 3 eggs
- Combine dry ingredients;
- blend margarine and lard into dry ingredients as you
- would
- for
- pie
- crust.
- Add currants. Make a well in the
- center;
- add beaten eggs and milk to well. Form a ball of dough.
- When
- all
- the dough has formed and the bowl is clean, break
- off
- smaller pieces and roll to 1/4-inch thickness. Cut in circles
- and
- fry
- on
- electric
- griddle at 300u0b0.
- Fry on one side
- for
- 3 minutes, then flip once and fry until brown. Cool on racks.
- Bag in plastic.
- Makes 6 dozen.
