Irish Raisin Bread
- 2 c. skim milk
- 2 Tbsp. vinegar
- 4 c. flour
- 1/2 c. sugar
- 1/2 tsp. salt
- 2 Tbsp. baking powder
- 1 tsp. baking soda
- 2 Tbsp. margarine
- 2 tsp. caraway seed
- 1 c. raisins
- 1 Tbsp. melted margarine
- 2 tsp. sugar
- Place vinegar in 3-cup mixing bowl.
- Add enough milk to make 2 cups.
- In separate bowl, combine flour, sugar, salt, baking soda and baking powder.
- Add margarine, seed and raisins.
- Mix together lightly with fork.
- Add milk mixture, stirring with a fork, but do not overmix; this is important.
- Put batter into greased loaf pan or 8-inch cake pan.
- Pour melted margarine over top; sprinkle with 2 teaspoons sugar.
- Bake at 375u0b0 for 10 minutes.
- Lower to 350u0b0 and bake 55 to 60 minutes or until it tests done.
