Kapusta(Polish Cabbage Soup)

  1. Drain soaking beans; cover with fresh water.
  2. Cook until tender.
  3. Meanwhile, fry bacon.
  4. Cut in small bits.
  5. Saute onion in bacon grease or other oil.
  6. Add onion and bacon to cooked beans. Add tomato sauce, vinegar, sugar, molasses and spices.
  7. You may need to add more water if soup is too thick.
  8. Stir in cabbage. Cover pot and allow cabbage to steam.
  9. Taste and adjust vinegar/sugar balance, garlic and pepper for a potent sweet and sour flavor.
