Mexican Stuffed Peppers

  1. Remove stems and white membrane from peppers. Rinse and set aside.
  2. Saute onion and garlic in a little water until tender. Add turkey, rice, raisins, brown sugar, vinegar, chili powder, cumin, cinnamon, coriander, salt and pepper.
  3. Stir in Mozzarella.
  4. Place peppers in casserole sprayed with Pam.
  5. Stuff with filling.
  6. Any leftover filling can be place around peppers.
  7. Cover with Saran Wrap. Microwave on Medium until peppers are tender.
  8. Remove wrap. Sprinkle with Cheddar cheese and cilantro. Place in a 350u0b0 oven until cheese melts.
