Mexican Stuffed Peppers
- 4 medium or large green peppers
- 1/2 lb. ground turkey, cooked and drained
- 1 small chopped onion
- 1 tsp. crushed garlic
- 1 c. cooked rice
- 1/3 c. raisins
- 1 Tbsp. brown sugar
- 1 Tbsp. vinegar
- 1 Tbsp. chili powder
- 3/4 tsp. cumin
- 1/2 tsp. coriander
- 1/2 tsp. salt (optional)
- 1 (12 oz.) jar salsa
- 1/2 c. nonfat Mozzarella
- 1/2 c. grated Cheddar cheese
- 1/4 c. minced cilantro
- Remove stems and white membrane from peppers. Rinse and set aside.
- Saute onion and garlic in a little water until tender. Add turkey, rice, raisins, brown sugar, vinegar, chili powder, cumin, cinnamon, coriander, salt and pepper.
- Stir in Mozzarella.
- Place peppers in casserole sprayed with Pam.
- Stuff with filling.
- Any leftover filling can be place around peppers.
- Cover with Saran Wrap. Microwave on Medium until peppers are tender.
- Remove wrap. Sprinkle with Cheddar cheese and cilantro. Place in a 350u0b0 oven until cheese melts.
