Crabmeat Au Gratin
- 1 lb. white crabmeat
- 1 stick celery, chopped
- 1 c. onion, chopped
- 1/4 c. bell pepper
- 1/4 c. oleo or butter
- 2 green onions with tops, chopped
- 1 (13 oz.) can evaporated milk or 1 c. half and half
- 2 egg yolks
- 1 c. bread crumbs
- 1 Tbsp. butter, melted
- 1/2 lb. grated Cheddar cheese
- 1 tsp. salt and pepper
- 1 tsp. lemon pepper
- 1/2 c. flour
- 2 dashes Tabasco
- Saute onion and celery in 1/4 cup butter until wilted.
- Blend in flour, stirring well.
- Pour in milk gradually, stirring constantly.
- Add beaten egg yolks and seasonings.
- Cook 5 minutes. Add crabmeat to mixture and blend well.
- Pour into casserole dish sprayed with Pam.
- Sprinkle with cheese.
- Top with bread crumbs drizzled with 1 tablespoon butter.
- Bake at 375u0b0 for 15 minutes or until lightly browned.
