Chad'S Chili
- 1 (14 1/2 ounce) can fire-roasted tomatoes
- 1 (15 ounce) can pinto beans
- 1/2 onion
- 1/2 green pepper
- 1/2 red pepper
- 5 jalapenos
- 2 garlic cloves
- 4 tomatillos
- 1 1/2 tablespoons Worcestershire sauce
- 1/2 teaspoon cumin
- 1/2 tablespoon liquid smoke
- 1 tablespoon chili powder
- 1/2 tablespoon paprika
- 1/2 teaspoon pepper
- 1 (6 ounce) can tomato paste
- 8 ounces beer
- 1 1/2 lbs chuck roast
- 1/2 lb bacon
- Roast Tomatillos over open flame. Cool, then crush or chop.
- Cook bacon in pan. Pull and reserve fat.
- Chop and add onion, green pepper, red pepper, jalapenos to the pan with some of the bacon fat. While cooking, mince garlic. After 5 minutes, add minced garlic. Remove from pan.
- Cube, season, and sear chuck in pan, using bacon fat.
- Add all ingredients to slow cooker. Add water if needed for desired consistency. Cook on high for 4 hours Reduce to low and cook for 4-8 hours.
