Trimmed-Down Taco Bake
- 1/2 lb. extra lean ground beef, crumbled
- 1/2 c. green pepper, washed, seeded, cored, ends removed and chopped
- 1/2 c. onion, peeled, ends removed and chopped
- 12 oz. canned pinto beans, rinsed and drained
- 6 oz. tomato sauce
- 1/2 c. salsa
- 2 tsp. chili powder
- 1/2 c. sour cream or low-fat substitute
- 1/3 c. reduced fat Cheddar cheese, shredded
- 1 c. unsalted tortilla chips, coarsely crushed
- Preheat oven to 350u0b0.
- In a 10-inch deep dish style microwave-safe pie plate, combine ground beef, green pepper and onion.
- Microwave on High for 4 to 5 minutes, or until meat is no longer pink, stirring once to break meat apart.
- Remove from microwave and drain.
- Add beans, tomato sauce, salsa and chili powder; mix well and set aside.
