Maple Syrup Layer Cake
- 2 1/2 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 1/2 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 cup butter, softened
- 1/2 cup sugar
- 2 large eggs
- 1 cup pure maple syrup
- 2 teaspoons vanilla
- 1/2 cup hot water
- 1 cup finely chopped walnuts (optional)
- Cream butter and sugar well. Add in eggs, one at a time, beating well after each addition.
- Blend in maple syrup and vanilla.
- Gradually add sifted dry ingredients by thirds, alternately with the hot water; and ending with dry ingredients. Gently stir in walnuts.
- Pour into 2- 8 inch greased and floured layer pans.
- Bake at 350 degrees for 30-35 minutes.
- Cool on wire rack for 10 minutes. Remove layers and cool completely on wire racks.
- Frost.
