Lo-Cal Italian Chicken Skillet
- 1 pkg. chicken
- 3/4 c. chopped celery
- 3/4 c. chopped green pepper
- 1/4 c. chopped onion
- 1 (4 oz.) can mushrooms
- 1 (28 oz.) can Italian tomatoes
- 1 tsp. garlic salt
- 1 tsp. parsley flakes
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/4 tsp. pepper
- 1 tsp. vinegar
- In large nonstick frypan, over high heat, place chicken and cook, turning, until brown on all sides.
- Push chicken to one side of pan.
- Add celery, green pepper, onion and mushrooms.
- Stir and cook 5 minutes.
- In bowl, place whole tomatoes; stir in garlic salt, parsley flakes, oregano, basil, pepper and vinegar.
- Add to frypan.
- Bring to boil; reduce heat.
- Cover and simmer 20 minutes. Remove cover and cook 10 minutes more or until fork-tender.
